Heather needs....

I read this on someone else's blog and I thought it was kind of cute and fun, apparently it's circulating on facebook. Anyways I thought I would try it and you can too! My comments are in brackets.

All you need to do is google your first name plus the word “needs” after it (i.e.: “Heather needs”) and hit enter. Make a note of the top ten hits and wonder: a) what the hell goes on on the internet when your back is turned… b) why so many people require emergency prayers?

1. Heather needs to grow up. (Nice! I think I'm pretty grown up already, I am almost 30 after all!)

3. Heather needs a childhood. (I like this one, I sometimes think I do need a childhood, cause I grew up pretty fast!)

7. Heather needs some body guards. (Sometimes it would be nice to have an entourage, but mostly just to carry stuff and to find parking spots, I really don't think I need guarding *shrug*)

8. Heather needs £10000 a day. (Sounds good to me, I could then live in London quite comfortably and John could be a kept man!)

9. Heather needs Gatorade. (I hate Gatorade, eyuck!)

10. Heather needs a family. (Nope not me, I have lots of family, and I love them all, well most of them :)

So what have I been up to these past couple of days, well mostly cooking and figuring out what I can, and cannot eat! But other than that, it was my Dad's birthday on Sunday so we headed over there for dinner. It was good. I think my Dad was really happy so that's what's important and the food was great, although I was scared to eat any of the yummy stuff like burgers and hot dogs. I did however indulge in a bite of John's cheeseburger and a few homemade oatmeal cookies (which were to die for) but I paid for it the next morning. My stomach was very yucky!

Which leads me to another problem. I took a bunch of pictures at my Dad's and when I went to download them today they weren't there. It turns out that I have a faulty memory card! So I lost a whole bunch of pictures!! Ask me how angry I am!!?!??
Anyways camera fiasco over, I am glad to know what the problem was and happy that I won't keep losing pictures. And also happy that it wasn't my faulty camera!!

On Monday I got to look after my little niece for a while. She is getting so big, it is hard to believe that she is almost 2 already!! She was really cute, she spent all afternoon running around stealing my shoes. She would put them on and then walk around in them for awhile, and then move on to the next pair.

She loves posing for the camera, and when I turned the camera around and showed her the picture, she said "aaaawww". Like I'm so adorable! And she really is!
I also tackled making a nice chicken stock. It was actually really easy. Just boil a chicken with some spices, salt and pepper, and some carrots, onion and celery, and 6 hours later you have a yummy stock.

Then on Tuesday I turned the stock into delicious chicken noodle soup. I hate to gloat but it really was delicious, well according to John it was, and he's my toughest critic. I had a little taste but couldn't eat much more than that because of the noodles which have wheat, which I think I may be allergic to or at least intolerant of. Why does my stomach have to be so intolerant??
So other than cooking, I have mostly been trying to organize the house a little (which is a huge project) and I went and watched the boy's basketball finals, which they won!! And I also lost picture of! Urrrghh!!

Oh and also I went over to my wonderful sister-in-law Cass's and she helped me create my wedding invitation. It looks really good. We made a little prototype which you can have a sneek preview of:

Isn't it awesome, just as good as going to the social page or something like that. Cass is totally talented, I love the monogram she made for me! The heart will be different and it's not the exact colors but it's close! I'm getting more excited about the wedding everyday. I can't wait to be Mrs. Gibson!
Anyways that's about all I've been up to lately, must go do some more meal planning!

Eating Alive

Well believe it or not I spent most of the day, shopping for and cooking food. I haven't been feeling very good lately, lots of stomach issues. So I have decided it is time to suck it up and do something about it. My whole life I have struggled with stomach problems, but have never really been diagnosed with anything, except for anxiety, but I think a lot of my issues come from what I eat. I think there is a possibility that I am lactose intolerant, and/or a celiac or just wheat intolerant. I am currently trying to figure it all out through the process of elimination which means keeping a fairly detailed food journal. I have to say that by taking things one day at a time, and one food at a time, I am finding out a lot about myself. 
A while ago I read this book called Eating Alive, and it really made sense to me. It talks about how important it is to listen to your body and that most health problems start in the digestive system. Anyways I definitely recommend reading it, but the point is that it has a recommended eating plan, and for the first 3 weeks it is cow product, milk and wheat free. So I thought it would be good for me to try. But it is a lot of work and dedication, you have to plan and cook a lot. But I think it will be worth it. So today for lunch I made Lentil Soup. It was super tasty, but it took about 2 hours to make. The good thing though is now I have several portions in the fridge and freezer, so next time I want to eat it all I have to do is heat it up. It was pretty thick and a little more like a stew than soup, but very hardy, good for a winter day. Check it out, I should have taken a picture of it in the pot, but I forgot so here it is in a tupperware container ready for the fridge:
Then tonight I made applesauce, which was sooooo easy and super yummy and super healthy. I just used organic MacIntosh apples, peeled them, cut them up and put them in a pot with a tiny bit of water, then you let it simmer for about an hour stirring occasionally and voila, you have applesauce. You could add a little cinnamon or stevia to taste, but I liked it plain so I didn't.
It will definitely make yummy snacks!

In other non-food related news, Jack won his basketball finals, so that was good. It was a good game to watch and it was a great way to end his Junior High basketball career. I am finding it so hard to believe that he will be in Grade Ten next year, and he's driving!! He only has his learner's but jeez, he seems too young. Kids grow up so fast!
John and I also booked a mini-honeymoon today!! I am so excited, we are getting married in June, and we are going to Italy for our honeymoon but not until September (it's less busy and easier for John to leave at that time of year), so we decided to do a 5 day trip to Montreal in July. It will be our first trip as Mr. & Mrs. Gibson. I am really excited!!
Anyways that's it for now, I will try to keep you updated on the recipes and food, and how it all goes on this new program.

So today nothing too exciting happened. I stayed up way too late watching Desperate Housewives last night. I always have a hard time falling asleep when John isn't here, so I stayed up until I couldn't keep my eyes open. So needless to say I slept in a little, and then I took Jack and Matt for brunch, yes Matt joined us, can you believe it? It was really nice to see him! I feel like since he got a car and a girlfriend I never see him, and he almost never comes for brunch. So it was good to see him. 
So after brunch, Jack and I went to see Gran Torino. It was really good. Very dramatic, and I had tears in my eyes at the end.  I have to say that I love Clint Eastwood, he's so classic.
I also discovered that my phone had stopped working.  It was the weirdest thing because it looked all normal, but I couldn't receive any calls or text messages, and then after awhile I couldn't place any calls.  Anyways I phoned Rogers technical support and it turns out I needed a new SIM card which cost me $25. I guess they recommend that you get a new SIM card every two years and mine was like 5 years old. The thing that kind of choked me about it, is that you should get a new SIM card with every new Rogers phone that you buy, but you have to watch because in my case the sales guy just kept mine. And because I didn't know there was nothing I could do about it. Oh well it could have been worse, and at least my phone works now. It sucks not having a phone, I felt so insecure.
After the Rogers ordeal, I hit the treadmill, and then I colored my hair again. Which if you are going to do yourself, I definitely recommend L'oreal Feria. I find it to give the best color. And now I am just surfing and watching TV.

Happy Valentine's Day!!

Or as someone else I know calls it "Single Awareness Day" which I thought was really funny!

A friend of mine sent me this little Valentine and I thought it was really cute, so I thought I would share it with you:
I hope your day is going well, mine is going great!! It started off pretty early. I drove Nick and John to the airport at 6am. For Nick's birthday (which isn't actually until March), John is taking him to the NBA All-Star game in Phoenix. John started taking the boys away individually instead of us giving them a gift, and it's really nice because then he gets real quality bonding time with them. So off they went and though I was sad to send my Valentine off on a plane, I was very happy that Nick and John get to go off and have some fun together. They aren't back until Monday so I am looking forward to catching up on some chick-flicks and knitting. I know pretty exciting right?

John was really sweet and bought me flowers for Valentine's Day yesterday. They are absolutely beautiful and this really cool orangey-pink color. I'm not sure you'll be able to see the color perfectly in this picture, but you'll get the idea.

So I headed over to my good friend Aniko's house and we did a little shopping and then we made cookies. It really was so much fun! She wanted to make heart-shaped sugar cookies, and then we also made Raspberry Almond Thumb-print cookies. They turned out so well and we had a lot of fun making them. Yummy! We got the recipes off of allrecipes.com, which is a really great website if you haven't already checked it out, anything you could ever want to make is there.

Then my Mom and Anne came over for dinner (see Mom, you did get a blog mention). We didn't have anything too exciting, just some soup and vegetable fried rice. But it was really good, and it really hit the spot on such a cold and yucky day, and it was great to have company! Now I am watching Lars and the Real Girl with Ryan Gosling, which is actually really quite cute, I would definitely recommend it.
Anyways sorry for the play by play and not much travel info, but sometimes I just really enjoy writing!
